Easy Dinner Recipes We Loved

What We Ate This Week; Easy Dinner Recipes
I love to eat. Good food is an event and it’s always been something I’ve looked forward to. In high school, when I discovered my love for writing, I dreamed of becoming a world-renowned food critic—traveling to the finest restaurants, savoring exquisite wines and meals in hopes of my glowing reviews. I still think it would be brilliant and I don’t know why I ever forgot about it, but alas, I digress….here are some easy dinner recipes!
I cook dinner almost every night and I like to try new recipes all the time. I thought I could start sharing the ones we really loved each week. I look for flavorful, healthy meals that are quick and easy to pull together on week nights.
Crispy Hot Honey Chicken w/ Feta

This was so easy and really delicious. The light crisp, the spicy/sweet honey and the salty kick of the cheese made this one a winner. We pumped it up a notch with some really good blue cheese that I happened to have on hand. I had fresh honey and made my own hot honey w/ red pepper. I served it with crispy potatoes and a simple salad with olive oil and fresh lemon juice. Find the recipe here.

Creamy Chicken Stroganoff

A little twist on the classic Beef Stoganoff. Delicious comfort food. I made a few tweaks to this recipe:
1. I only coated the chicken very lightly w/ flour.
2. I sautéd the onions first and then added the mushrooms to the pan when the onions were beginning to soften.
3. I used greek yogurt instead of sour cream and added it after it was off the heat to avoid possible separation of the sauce.
This was really flavorful and easy to make. After the chicken is seared it comes together very quickly. I served it with steamed broccoli and an organic millet that is popular here. Find the recipe here.

Chicken Piccata

Another chicken meal, I know! (We also ate air fryer salmon and filet mignon this week, but you probably don’t need recipes for those, lol.)
This chicken piccata was a hit. The sauce is creamy and tangy w/ the lemon and the capers. I served it with rice and steamed broccoli, but it would be delicious with cauliflower rice as well, if you wanted it low carb. Find the recipe here.
Time Commitment: About 30 minutes
